Quinoa Pudding

This is a modern alternative to your classic Rice Pudding. I personally think that Quinoa (pronounced keen-wah) is awesome!


  • 3/4 cup quinoa, rinsed
  • 4 cups skim milk (I use almond milk, but anything will do)
  • 1/4 cassonade sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1/4 tsp ground cardamom
  • 1/2 cup raisins
  • 1/4 cup chopped dates (I sometimes use fresh figs)


  1. Bring quinoa and 3/4 of the milk to the boil in a large heavy bottomed saucepan and then reduce heat
  2. Simmer for 12-14 minutes or until tender, stirring occasionally
  3. Whisk sugar, honey, eggs, cardamom and the last of the milk together in a large bowl
  4. Slowly pour the egg mixture into the saucepan, stirring constantly
  5. Add fruit
  6. Cook until mixture is thick and creamy (you can test by checking to see if the mixture coats the back of a spoon)
  7. Pour the pudding into your desired dish and let cool
  8. Cover with plastic wrap and fridge until cool (Note: this will last up to 3 days in the fridge)
